BANANA CAKE

Banana Consumption at my house is really hard to predict. When I buy a bunch of bananas, sometimes I don’t get one because they IMMEDIATELY get gobbled up by hungry, ravenous beasts…aka…my littles. Other times they sit…and sit…and sit…waiting for someone…begging for someone to eat them. But I don’t mind because then I get to make things like this delicious Banana Cake!

BANANA CAKE WITH CREAM CHEESE FROSTING

Our banana cake with cream cheese frosting is the perfect combination of sweet with the creamy cream cheese frosting! It’s soft and dense and full of flavor. You can add a little lemon juice for a little bit of zing if you prefer, but my kids like it the best when I add the vanilla! I think it tastes great either way!

EASY BANANA CAKE RECIPE

I was discussing bananas with my friend the other day and she told me I had to give her EasyBanana Cake Recipe a try. So…I bought some bananas and actually hid them from the kids so that they would NOT get eaten before they ripened enough for me to try out this recipe!

This cake did not disappoint! I love having a lot of different options for using up ripe bananas and this one will definitely stay in our recipe rotation.

FAQs

Why is my banana cake not fluffy? ›

It's important to make sure your bananas are well mashed. If they aren't broken down well enough less moisture is released from the fruit, effecting the texture of your cake. That being said you don't want to blitz it to a banana puree either! A few chunks here and there adds some variety and texture.

Why is my banana cake so moist? ›

Using a lot of bananas adds excess moisture, and there are two ways to get rid of it. You could either add more flour or increase the baking time. Add a tablespoon of extra flour at a time into the batter and give it a good whisk until its consistency starts to look right: thick but runny enough to fall off a spoon.

Do bananas have to be ripe for banana cake? ›

Ripeness of bananas: To make banana cake, your bananas need to be very ripe. Please don't try to make this with green or very firm bananas as it just won't work in the same way. The banana skins should be very speckled, or (ideally) almost totally brown or black on the skins.

How long can banana cake last? ›

How to Store Banana Cake. Store the frosted banana cake in an airtight container in the refrigerator for up to four days.

What is the secret to a very fluffy cake? ›

Most cakes begin with creaming butter and sugar together. Butter is capable of holding air and the creaming process is when butter traps that air. While baking, that trapped air expands and produces a fluffy cake. No properly creamed butter = no air = no fluffiness.

What is the secret to soft fluffy cakes? ›

Leavening agents, such as baking powder and baking soda, play a crucial role in making cakes rise and achieve a fluffy texture. These agents produce carbon dioxide gas when combined with liquid and heat, creating air pockets that lighten the batter.

What happens when you put too much banana in banana bread? ›

Using too much banana could make your bread heavy and damp in the center, causing it to appear undercooked and unappealing. If you have bananas leftover, you can always freeze them for later use.

Can I use both butter and oil in cake? ›

Oh yes, you sure can. This recipe has a combination of butter and oil to give off that nice buttery taste while keeping it soft and moist at the same time. Cake using pure butter tends to be more dense and dry compared to adding oil into the batter.

Why is my banana cake so heavy? ›

Using too much butter makes for a heavier cake with less banana flavor. Using double the amount of butter that the recipe called for left me with a loaf that was dry on the outside and moist on the inside. The coloring was almost identical to that of the loaf made with too little butter.

Can bananas be too old for banana cake? ›

Yes, you can use overripe bananas instead of ripe ones when baking banana cakes or muffins. Overripe bananas are actually preferred by many bakers for these recipes because they have a stronger, sweeter flavor and a softer, moister texture. Just make sure to mash them well before adding them to your batter.

When not to use bananas for baking? ›

While it's okay if the banana peel is dark brown or even black, if the inside is too, then the fruit is beyond ripe and now on its way to rotten. Another sign that bananas have gone bad is if they start leaking any fluids. When in doubt, just toss the bananas out.

Why did my banana cake turn green? ›

In much smaller quantities, the baking soda still has a chemical reaction with acid. Low and behold the acidic component is in bananas, so any excess baking soda that doesn't help the banana bread rise will react, hence green or blue banana bread slices the next day.

Should I refrigerate my banana cake? ›

To store: Store leftovers covered in the refrigerator for up to 5 days. The best banana cake can also be wrapped in plastic wrap or placed in an airtight container and frozen for up to 2 months! To enjoy, simply let the cake thaw in the refrigerator, or at room temperature!

How many bananas is 1.5 cups? ›

2 bananas: 1-1/3 cups chopped | 1 cup mashed. 3 bananas: 2 cups chopped | 1-1/2 cups mashed. 4 bananas: 2-2/3 cups chopped | 2 cups mashed.

Why is my banana bread dense and not fluffy? ›

You Over-Mix the Batter

For soft and tender banana bread, gently stir the wet ingredients into the dry — don't overmix! The more you stir, the more gluten will develop. The result will be a tough, rubbery banana bread. Simply stir until moist, and then do no more.

Why does my banana cake go flat? ›

This is because too much batter in one cake tin may result in the weight of the batter being too much for the cake to support, causing the cake to collapse and sink in the middle as it bakes. This is especially true for cake recipes which have a more softer, delicate structure to them, which many of my cake recipes do.

Why is my cake dense and not light and fluffy? ›

8. My cake is very dense. This could be because a/ the cake mixture hasn't had enough air beaten into it, b/ the eggs were added too quickly and curdled or c/ there's not enough raising agent.

Why is my banana bread spongy? ›

Adding more eggs makes for a spongy, less flavorful banana bread. Doubling the number of eggs I was using resulted in a spongy cake with a moist texture. While the banana flavor was present, it wasn't as prominent as it was in other loaves.
